Yes you can do this easily with the customer choice option. If you will need to make any product’s customer choice option you can also do this from this panel. According to customer choice option you can set SKU, Stock and price.

Trying on demo will not work cause every after 30mins the demo has been restored and a lot of customers are regularly browsing the demo and sometimes they even delete the product.
