Currently the plugin is configured so that customer orders are every 2 days, but we want orders placed before 12 am to be shipped in 48 hours and those made after 12 am to be shipped in 36 hours. Yes you can add delivery time to any product old and new create
For old products you can use import function for easily import delivery time if delivery time is different for each product
If delivery time is same for all product you can use global option so you don’t need to do anything with products, you can manage it from plugin setting page

The timeinterval seeems to do nothing either. I the timepicker still shows each hour. I would expect that you can select a timeperiod, like i want to pickup between 9-11 hours. Is it possible to increase timeslot to 2 hours?

Can the plugin: - set minimum time between order and pickup - show the pickup time option only when local pickup is selected? so when the customer chooses delivery, there is nothing choose for them, only when selecting pickup?
Yes you can display date field only for local pickup and hide for other shipping method using this plugin
