1. Multisite installation – Yes it will work with multisite.
2. For Designing PDF we have given wp-editor through that you can design your pdf format but mPDF library does not support all css check here – https://mpdf.github.io/css-stylesheets/supported-css.html , But if you want we can customize to implement your exact required pdf design.

Can the editor include fields from a post eg i want all the fields from the gravity form AND i want to create a blog post to have a specific message with images. Can I add content from both gravity form and post?

All gravity forms fields are supported and for post content we don’t add automatically but we provide a editor for PDF layout and design through which you can add any HTML, text, images etc.
Yes you can set different layout and design of PDF for each form.
