Hi. Turns out it was a conflict with either the theme or one of it’s required plugins. So I just changed themes. I was using The Gem theme by CodexThemes… if you wanna contact them it might be a good idea.
What was happening was – 1) I would paste the shortcode provided by your plugin to a page 2) When I would view the page on the frontend it would show me the first three posts but there was no scroll bar on the left to scroll down on the page
With the new theme, I have no problems. But I would deff try to get that fixed with the Gem Theme

the plugin is only displaying the categories and not the post on the page. for example if i have four post it will display the category each post belongs too and not the post it self.

The most of the issues are coming from your translation. You have translated the option names so that the function are not recognizing the options so that it saving the default one. Your grid layout also does not working before because of translation. You have checked the grid layout option name to something else. We suggest you to do not translate the plugins option to some other language.

I’m afraid I don’t get what you say, cause I did NOT translate anything (not that I know, to be honest)
Simply put: I’m using Wordpress in it_IT (Italian), and it auto translates so many strings (but it does it with all plugins always!)
I can’t give the client the ENG wordpress, you see? 
I’ve tried ID but it’s not the best option… Can you suggest a workaround?

Yes we will edit the code of the plugin and it is not reset, after editing the code it will work.
We are planning to remove the translation ready from these option so that you do not have to worry about it.
This is premium plugin and the premium plugin normally do not update automatically you have to update the plugin manually.
Please let us know then we will remove the translation codes from your plugin options.

if it’s useful for you, WPML says “Plugin author should check if values are wrapped and remove gettext calls. WP Query vars in most cases are not translated, like order-by argument.”

The plugin does not have such issue, We have tested the plugin in our local server the plugins works properly you can check this screenshot http://prntscr.com/muzqzj only in your site the plugin conflicting.
The date is simply display using the default WordPress codes <?php echo date_i18n( $dateformatstring, $unixtimestamp, $gmt ); ?>
This code is used to display the date with Internationalization but when we removed the Internationalization filter then it works in your site. Please check your site.

I mean, the only way I understood is to everytime change the URL manually?!

We have checked your site and we have found that the Grid name is translated to in other languages. The grid slug did not find by the plugins function so that the plugin template is not working on your site.
Now we have removed the translation from the select template option and you can check your plugin options. All the issues are resolved now. Please check and let us know. If you have anything else.

Slug changes will not effect on your any templates it only protects the plugin with the free plugin automatic update.
When you choose the template the template design is load under the template option. You can compare your live view of the post with that template image.

We Have slug related issue on the plugin so that you are getting update option on your site. After updating the plugin it was replaced with the free version.
Now we have fixed the issues in your site and we will fixed this issue on our next update of the plugin. Now your site has the premium plugin and you can check the template setting you will get all the templates.
We have configure the plugin and we have found that the elemntor plugin making conflict on the plugin. If you check this normal page link http://staging.microntel.com/testing-post-plugin then the plugins designs showing properly and check the page that you have created with the elementor. We have fixed the same isse before when your plugin has replaced with the free version because the free version has limited templates and easy to replace the elementor conflict codes.

Anyway, not sure I understood: what am I supposed to do with the updates that WP asks to do, on your plugin? why is it even replacing the free one with the premium automatically?
should I do anything in particular?
I don’t think my final client will actually check what’s updating rather than “Bulk update all”... so this can be a problem, don’t you think?
